What is this thing?

33 Coffees is a tasting guide designed to help you capture and remember your coffee tasting experiences, good and bad. 33 Coffees is meant to be used in whatever way seems appropriate to you. We’ve intentionally designed the pages to allow for flexibility. With coffee, there are multiple brew methods, varietals, roast profiles, all of which can produce a tasty final product.



How can I make sure I am getting "the best coffee?"

Seek out coffees that are fresh, roasted within the past 7-10 days, and grind just before brewing to maximize aromatics. Remember that coffee is an agricultural product and coffees will change from year-to-year, even from the same farm. An individual coffee’s flavor profile can be impacted by climate conditions, harvest cycles, sunlight, rain and temperatures.



How's the Flavor Wheel work?

The tasting wheel is a list of flavors that may (or may not) exist, in varying degrees, in any cup. Rate the coffee by filling in the dots for flavors you pick up on. Mark near the center of the wheel for low presence, and towards the outside when a characteristic shines through. Be sure to savor the experience, and notice that coffees can transform as they cool. The addition of milk (i.e. cappuccino) can highlight new flavor experiences. A high altitude Guatemalan auction lot is used in the example shown.
